Hey ladies! Soooo, does your Baby and/or Toddler love vegetables?! Well, mine did… until a few months ago. And, then he all of a sudden started getting an opinion! Imagine that! Yup. I used to be able to feed him any ole “green mush” (what my husband calls it) and Eli would scarf it down!
But, it’s almost as if he just now is developing his taste buds. Because now he prefers green mush with flavor! Ha! Easier said than done sometimes..
However, we all know it’s important for our kids to eat their vegetables. So, that poses the question of HOW?
Simply put… BE CREATIVE.
Yes, it takes time, thought and energy. A few things that can sometimes be hard to come by as a Mom. But, I think we can all agree that our children’s health is worth it. 😉 So, let’s jump into a couple super easy examples that you can use for DAYS.
TIP to simplify your life: Use your Magic Bullet.
Yes.. this has been my best friend since Eli turned 6 months old. In fact, we’re working on our 2nd one now, because I wore out the old one from so much use! He has eaten the most random, yet super insanely healthy food concoctions from this little machine for over a year now. Nowadays though, we have had fewer options in regard to what he will actually eat.
Here are a couple tried and true mixes that are packed full of 2 of the BEST super foods that all of us should be eating… And, these can be your “go to” foods to make sure your little ones are at least getting SOME vegetables throughout the day:
- Spinach and Apple Sauce– Buy either some fresh Organic Spinach from SAMS or organic frozen spinach from your local grocer. Throw it in a pan and boil for 3-5 minutes. Put a handful in the magic bullet, along with about a half a cup of organic non-sweetened apple sauce. Mix up and Voila! You have a delicious spinach apple puree that your Toddler will actually LOVE! ***Btw, I found out that you can pretty much do this with ANY green veggies. I just tried it with peas the other day, and to my surprise, Eli gobbled it up!! Woohoo!
- Avocado and Banana– This one is pretty scrumptious. Put half of an avocado and half of banana in the Magic Bullet, with a little almond milk. Sooo good! And, if ever Eli decides he doesn’t want it.. I am not disappointed. Because then I get to eat it!! 🙂 Throw some raw honey in it and you have an amazing creamy pudding!
Now, I love both of these quick mixes for the nutritional value and the simplicity. But, it also guarantees an opportunity to have a dish in which I can crush up Eli’s vitamins in. Because as we know at this stage, they can be a bit finicky on what they will eat. Not sure if this has ever happened to you.. but, it’s become quite common for me to make a well thought out meal that I know Eli will love, only to find out he wants nothing to do with it!! Ahhh! Yeah…
Well that throws Mama a curve ball and makes it easy to forget his vitamins. So, these are great “go to’s” to guarantee the vitamin intake as well. 😉
